Chicken & Veggie Chow Mein Noodles


Hey dolls! I love cooking and trying new recipes. Last night, I was tired after a long day at work (typical day) and I realized I had a few pieces of grilled chicken breast from earlier in the week so I decided to make this super easy and yummy recipe.

Servings: 6-8 
Cooking Time: 30 minutes

Ingredients:
Chow Mein Noodles (1 packet)
Chicken Breast (1-2 pounds)
Carrot (1)
Sweet Pepper (1 or 2)
Mushrooms (1 can drained)
Whole Corn (1 can drained)
Onion (1 whole small onion or half a large onion)
Garlic cloves (3)
Soy Sauce (1/3 cup)
Sesame Oil (2 tbsp)
Ginger (fresh grated ginger or powdered)
Pimento (1-2 for a hint of heat)
Salt & Pepper to taste

Optional: 
1 bag of frozen Asian vegetable mix
1 can bamboo shoots (drained)
Red Pepper flakes
Shrimp, tofu, pork or beef (or no meat at all)

Start off by boiling the chow mein noodles according the the directions on the pack. One pack should have at least 6 servings, simply bring the water to a boil, add some vegetable oil (to prevent the noodles from getting stuck together) and then add the raw noodles. I usually add a pinch of salt and boil the noodles for about 15 minutes. While the noodles are boiling, go ahead and add some vegetable oil to another pan (a wok if you have one) and add in your seasoned chicken breast (garlic salt, house seasoning) and cook until it's light brown. Add the vegetables and seasonings and keep stirring everything on high heat. When the noodles are done, strain it in a colander and add to the vegetables when they are almost done (about 15 minutes). After a good toss turn the stove off and there you have it!
